Serve them with maple syrup & crisp bacon for an American-style breakfast.
Ingredients
- 200g self-raising flour
- 1 teaspoon baking powder
- a pinch of caster sugar
- 2 medium sized eggs, beaten
- 300ml buttermilk
- 2 teaspoons melted butter
- 2 teaspoons oil
Step by step guide
- Sieve the dry ingredients into a bowl and then whisk in the egg, buttermilk (or milk and water) and melted butter.
- Leave the batter to rest for a few minutes while you prepare the frying pan.
- Wipe the pan with half of the oil and heat until hot. Pour 2 tablespoons of batter into the pan (it should set immediately in a rough circle). Cook for 1-2 minutes, or until the pancake has bubbled and is brown on the underside. Flip it over and cook for 1 minute more.
- Continue with the remaining batter, re-oiling the pan as needed. You may be able to cook several pancakes at once, depending on the size of your pan.
- Serve drizzled with maple syrup.
